<p>Undertake designated activities within the department to ensure service standards are achieved and risks managed. <p>MAIN OBJECTIVES: To implement Gulf Air s Summer/Winter Schedules on the short term with emphasis on minimization of cost achieving most effective utilization of resources. To control and distribute planned Gulf Air schedule for the current season and co-ordinate the planned operation with all internal GF departments to ensure maximum revenue benefit to the company. To implement schedule changes to gain advantage from all possible revenue opportunities. To optimise the current schedule with all possible changes and aircraft utilisation in coordination with network planning. Responsible to maintain an optimum slots portfolio for Gulf Air.</p><p>MAIN DUTIES:</p><p>1. Implementing of Gulf Air seasonal summer/Winter short-term schedule changes to gain advantage from all possible revenue opportunities.</p><p>2. Liaise with Network Planning to evaluate demands trends, identify customer s needs and seasonal capacity variations to develop optimum schedules.</p><p>3. Ensure efficient coordination with Flight Operations, Technical, Joramco, Planning, Revenue Management, Sales, Marketing, Customer Services to strike balance between optimum uses of resources versus revenue earning potential.</p><p>4. Manage and coordinate slots and secure the requied slot for all GF network schedule for short term plan.</p><p>5. Represent Gulf Air in IATA, AACO Schedule meetings and ensure necessary slots are secured.</p><p>6. Continually review and revise the schedule to match supply of travel with anticipated demand in coordination with Network Planning.</p><p>7. Implement the schedule Optimization in coordination with Network Planning, thereby maximizing revenue and minimizing costs.</p><p>8. Manage and ensure Engineering and operational requirements in the short term are complied with thereby not compromising the safety of Gulf Air operations.</p><p>9. Coordinate any changes both within GF and with external authorities to ensure that these changes are handled in an efficient manner.</p><p>10. Implement changes if required for extra flights on seasonal basis in short term planning stage such as Haj, Ramadan Umrah, F1, Teachers movement, Iraq Arafa and Arbaeen movement, etc.</p><p>11. Represent Commercial Planning in any schedule related forums.</p><p>12. Liaise with country manager concerning their schedule requirements and wherever it is practical/ justifiable to implement any changes to the schedule.</p><p>13. Handle any short notice requirements for schedule changes, as a result, of Engineering, Crewing constraints or VIP movements, national emergencies, etc. and ensure that GF interests are protected and minimal disruption to the core schedule.</p><p>14. Development of Gulf Air seasonal summer/Winter schedules based on agreed route and frequencies and fleet plan. Provide scheduling options by making capacity adjustments to accommodate change in market conditions.</p><p>15. Develop and implement any changes critical to the realization of the schedule taking all issues into consideration, including but not limited to future fleet deployment, rotational feasibility, future slot availability, crewing constraints and heavy maintenance, thus ensuring that Gulf Air operating goals are realized.</p><p>16. Maintain Gulf Air network slot portfolio and participate in negotiations with airport slot coordinators and airline schedulers to secure the most optimum slots for Gulf Air or recommend solutions to slot congested Airports. Appraise slot values at various slot constrained airports.</p><p>17. Co-ordinate with the respective Civil Aviation Authorities in countries where Gulf Air operates and ensure that each seasonal schedule is approved as filed.</p><p>18. Coordinate with Publication to ensure that accurate information is displayed in sync in all these schedule distribution systems.</p><p>19. Provide and maintain GF aircraft utilization/ASK/seat/aircraft count data and comparison on current and planned season on monthly basis manner.</p><p>20. Responsible for current seasonal fine tuning and schedule recovery within control period of schedule planning.</p><p>21. Responsible to ensure business cases are in place for any unplanned changes due to technical reason.</p><p>22. Monitor delays allocated under commercial division and raise any dispute if found.</p><p>23. Maintaining data in slot sets for the current planned season during the season and maintain data accuracy.</p><p>24. Maintain constraints data in schedule during the planned current schedule to be able to plan flights with no violations at airport or equipment level.</p><p>25. Maintaining record of current Fleet technical status.</p><p>26. Oversight and maintain record of charter flights for all the required approvals and following to ensure securing all approval before the commencement of operation.</p><p>27. Prepare Business Cases for all current schedule changes and maintain a record containing the type of changes; i.e due to commercial, mainteance, operational, etc.</p><p><strong>Desired Candidate Profile</strong></p><p>EDUCATION: University degree in Business Management; Mathematics is preferred. S/he is responsible for the smooth operation of the department; optimizes the use of materials and manpower, thereby maximizing revenue and guest satisfaction; executes training of Kitchen colleagues and set good example to enhance motivation of colleagues and reach the mission<br>CANDIDATE PROFILE <br>Education and Experience<br>• High school diploma or GED; 3 years experience in the culinary, food and beverage, or related professional area.<br>OR<br>• 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 3 years experience in the culinary, food and beverage, or related professional area.<br>CORE WORK ACTIVITIES<br>MAIN DUTIES<br>Assists the Executive Chef and Executive Sous Chef in the supervision of all employees engage in each particular kitchen.<br>Attends daily meetings with the Executive Chef, Executive Sous Chef and all the other Senior Chefs regarding the updates for the day and review the list of things to do for maximum 2 days thereafter.<br>Holds meeting with the colleagues in each particular kitchen to discuss what has been carried out in the daily line-up and some other issues.<br>Establishes culinary standards for the specialty of each kitchen which includes banqueting that caters to a number of guests.<br>Plans menus and compile recipes for food tasting to be approved by Executive Chef and/or the Executive Sous Chef.<br>Ensures that specific and accurate product specifications are used in writing the recipes, wherever possible, needs to use local and seasonal products available to make the dishes in the menus easily.<br>Ensures quality of the fresh food products received in order to keep the quality of food we are serving to the guests.<br>Inspects four times daily all food stores and refrigerated areas and suggest, where necessary, correct storage methods to comply with Health & Safety regulations as discussed further in this book<br>Checks any spoilage and ensure regular turnover of food items and informs the Executive Chef and/or the Executive Sous Chef.<br>Checks on a daily basis food preparation, individual costs, quality, quantity inventories and portion control.<br>In conjunction with the Executive Chef and/or Executive Sous Chef, establishes job methods and supervises on a regular basis, and correct if necessary, cooking standards to maintain a high quality of food and service on quality basis.<br>During service periods, personally runs the hot plate and assists when needed and ensures that the presentation as well as quality of the food is in accordance with the established standards.<br>Checks the cleanliness and sanitation in each particular kitchen outlets. Liaises with the Chief Steward in order to ensure high standards of cleanliness are maintained in all areas of the Kitchen, such as machinery, small Kitchen equipment, floors and fridges, to ensure a sufficient supply of crockery and cutlery for the service and the kitchen.<br>Plans the duty rosters on a weekly basis, ending every Fridays and to review on a daily basis with the Executive Chef /Executive Sous Chef accumulated overtime, lieu days and/or holidays even absenteeism.<br>Reports accidents and sickness in the Log Book and reports any such incidents to the Executive Chef / Executive Sous Chef on a daily basis.<br>Reports any problems regarding failure of machinery and small equipment to the Executive Chef / Executive Sous Chef and to follow up and ensure the necessary work has been carried out.<br>Conducts training and thorough briefing on the correct usage of Kitchen equipment and machinery and to check that this s carried out in the correct manner by all Kitchen colleagues.<br>Ensures the personal hygiene of the colleague is up to the standard.<br>Ensures that the daily log book is utilized, and complaints are immediately reported to the Executive Chef / Executive Sous Chef.<br>Ensures that all points mentioned in the log-book has been carried out i.e. Mise en Place and other instructions to complete the operation<br>Checks daily function sheets.<br>Passes all information to late shift about functions and or operations in the section including next day operations.<br>ADMINISTRATIONAL<br>Maintains, records and follows-up documentation i.e. department forms, checklists for control purposes. These documents are kept on file at least one year<br>OPERATIONAL<br>Assists the Executive Chef / Executive Sous Chef in interviewing and recruiting colleagues for all Kitchens.<br>Plans and implements effective skills training programmes in conjunction with the Training Manager and Departmental Trainers.<br>Weekly training of chef de cuisine and all their reports on European and global fine dining cooking technics and classic dishes not limited to modern interpretation according to established yearly training calendar in alignment with the Executive Chef<br>Maximises colleagues’ productivity and morale and consistently maintains discipline following hotel guidelines and local legislation.<br>Holds a daily training session and keep records, which will be submitted to the Chef’s Office for documentation purposes. He/she is responsible in maintaining or exceeding service levels and philosophy set by The Ritz-Carlton Gold standards. He/she will ensure that all dining experiences are quick and efficient and meet set and expected time requirements that have been set to ensure satisfaction. <br>He/she will ensure that restaurant quality scores for GSS are above company average and achieve a status of top five in the company. S/he will be responsible for financial and quality requirements for all food and beverage outlets. He/she has to meet and exceed all forecasted and budgeted obligations within acceptable guidelines.
